SWIT Epicure Training Restaurant Term 2 a la Carte Menu 2 w/ Kiss Chasey Premium White 2009

桌上的佈置跟上次沒有大變動.

但這個餐巾是第一次留意到的.

點了一枝典型 Margaret River 白酒 (混合 Blended) Kiss Chasey, 原來她是源出於 Swings & Roundabout 酒莊. 上一次探訪這酒莊時也沒留意到這枝酒, 哈 ! 算是走漏眼了 !

這次的菜式不再是套餐, 而是 a la Carte, 每道菜有三款不同的菜式可選擇.

前菜前的開胃小點.

前菜之一 Parsnip veloute with poached free range egg, crispy bacon and forest mushrooms.

前菜之二 Salt and pepper squid with pork belly, Thai herb and rice noodle salad, peanut nam jihm.

主菜之一 Confit of chicken with cauliflower two ways, pearl cous cous, tea  soaked raisin and caper dressing.

主菜之二 Slow cooked lamb shank gratin with horseradish potato puree and truffled winter greens.

甜品之一 Bittersweet chocolate marquise with coconut and cherry pudding, cherry granita.

Blue Costello (Denmark) with sweet and sour figs, roasted walnuts and quince paste.
